Peanut butter, sambal oelek, mayonnaise, and fries: What initially sounds like a wild kitchen experiment is already a snack classic in the Netherlands. Behind “Patatje Oorlog” is a combination that works surprisingly well—especially when the sauce achieves the right balance.
When someone orders “Patatje Oorlog” at a fry stand in the Netherlands, a German might initially hear only “ear hole” and be puzzled. However, it refers to a special variant of fried potato sticks that are a staple of snack culture among our neighbors.
“These are freshly fried fries served with a combination of peanut sauce, mayonnaise, and raw onions,” explains Nick Slagter from the mobile snack stand “The Flying Dutchman” in Winschoten.

Battlefield on the Fries
The name “Patatje Oorlog” translates to “fries war” or “french fry war” in English. According to Slagter, it refers to the “battlefield” of various sauces that come together on the fries.
However, the peanut sauce is not as sweet as it might initially sound. It is more of a sweet-spicy satay sauce, which gains significant heat from sambal oelek. As with many snack classics, each stand and Dutch home cook has their own version.
All ingredients go into the blender. The sauce can then be served cold or warm over the fries. Those who want to make the “war” with mayonnaise particularly pronounced can enhance the peanut sauce with a dash of soy sauce and a bit of honey. It becomes heartier with a clove of garlic. How the combination of raw onions and garlic is received by others after consumption should be of little concern.
