Mücver are zucchini fritters from Turkey, served as mezze, or appetizers. This delicacy has been popular since the time of the Ottoman Empire. Originally, the recipe for Mücver comes from the region around the Black Sea, but it quickly spread throughout the country and is now popular beyond Turkey’s borders.
The zucchini fritters taste good warm or cold and are especially delicious with herb or garlic dip. Making Mücver yourself is easy and quick with this recipe. For those who want to get creative, Mücver can also be made with pumpkin, potato, or garlic. Feta cheese is often added to the recipe. In Ottoman cuisine, Mücver was not a vegetarian dish. Recipe for Mücver from Turkey
Ingredients
- 800 g zucchini
- 3 green onions
- 1 bunch dill
- 1/2 bunch parsley
- 2 eggs
- 6 tbsp flour
- 130 ml sunflower oil
- Salt and pepper
Preparation
- Wash the zucchini, trim the stems, and grate the zucchini using a vegetable grater. Salt the grated zucchini and let it sit in water for about ten minutes.
- Cut the green onions into thin rings, and finely chop the parsley and dill.
- Squeeze the zucchini mixture well and place it in a large bowl with the herbs. Add eggs, flour, pepper, and salt, and mix well.
- Pour sunflower oil into a pan until the bottom is covered. Add a heaping tablespoon of vegetable batter to the pan and shape into flat fritters. Then fry until golden brown on both sides.
- Place on paper towels to drain and serve lukewarm. Tastes especially good with herb dip.
