Many amateur cooks think it’s difficult and time-consuming to prepare summer rolls. But that’s not the case! With our recipe, you can quickly whip up the Vietnamese appetizer. Plus, there’s a delicious peanut sauce to go with it.
Our favorite appetizer from Vietnam is easy to make at home. And since we believe summer rolls taste best with peanut sauce, we’re sharing that recipe too. You can choose the filling for the rolls yourself—we opted for shrimp summer rolls, but if you leave them out, they’re also suitable for vegans and vegetarians.
Even a low-carb version is possible with this recipe! If you want, you can use cabbage leaves instead of rice paper. For two servings, you’ll need six large leaves, which you blanch in lightly salted boiling water for about half a minute.
Don’t confuse summer rolls with crispy spring rolls made from dough sheets. Our roll is not fried but wrapped in rice paper. Translated, Gỏi cuốn means “salad roll,” which became summer roll in German and Anglo-Saxon regions. It likely originated in Vietnam, but it’s also eaten in Cambodia, Laos, Thailand, and China.

Ingredients (for 2-3 people)
For the Summer Rolls
- 1 cucumber
- 1 carrot
- 1 mango
- 1 lime
- 1 avocado
- Shrimp
- Rice paper
- Salt
- Pepper
- Chili flakes
For the Sauce
- Peanut butter
- Soy sauce
- Maple syrup
- Lime
- Fish sauce
- Garlic
Preparation:
- Peel and slice the carrots, mango, cucumber, and avocado into sticks.
- Sauté the shrimp in oil and season with salt, pepper, and optionally chili flakes.
- Now it’s time to roll! Pour some water onto a plate and moisten the rice paper on both sides. This is important to make the rice paper pliable enough to roll well later.
- Then place the ingredients in the center of the rice paper.
- Fold the rice paper on both sides.
- Now wrap the rice paper tightly around the ingredients and roll it up.
The Peanut Sauce
- Chop the garlic clove and place it in a bowl.
- Chop a small piece of ginger and add it.
- Add three tablespoons of soy sauce.
- Squeeze two lime halves into the sauce.
- Add two tablespoons of maple syrup.
- Add two tablespoons of peanut butter.
- Add two tablespoons of fish sauce.
- Stir for five minutes and it’s ready. Now just serve with the summer rolls.
